Choosing Your Lobster

If buying live, look for an active lobster with a curled tail and no strong odor — a sign of freshness. Frozen lobster tails are a convenient alternative and work beautifully in all the methods below.

Three Ways to Cook Lobster

1. Boiling

Bring a large pot of heavily salted water to a rolling boil. Submerge the lobster head-first and cook for about 1 minute per 110g of weight (roughly 8–10 minutes for a 450g lobster). The shell will turn bright red when done.

2. Steaming

Add a few centimeters of salted water to a large pot fitted with a steamer basket. Bring to a boil, add the lobster, cover, and steam for 1–2 minutes longer than you would boil, since steam cooks more gently.

3. Grilling

Split the lobster lengthwise, brush the meat with melted butter, and grill flesh-side down over medium-high heat for 5–6 minutes, then flip and finish for another 2–3 minutes. Grilling adds a smoky char that pairs beautifully with the sweet meat.

The Classic Butter Sauce

Melt unsalted butter slowly over low heat, then stir in a squeeze of lemon juice, a pinch of salt, and finely chopped chives or parsley. Serve warm alongside the lobster for dipping.
